QUICK & EASY

Black Bean Beef Stir-Fry

SERVES : 4

INGREDIENTS :

  • 60ml peanut oil
  • 2 cloves garlic, thinly sliced
  • 4cm piece ginger, cut into thin strips
  • 2 eschalots, thickly sliced
  • 3 spring onions, trimmed, cut into 3cm lengths
  • 5 x 100g beef steaks, thinly sliced
  • 200g snow peas, trimmed
  • 1 red bell pepper seeded, thinly sliced
  • 1 yellow bell pepper seeded, thinly sliced
  • 225g jar black bean sauce
  • Roasted cashews and steamed white rice (optional), to serve

METHOD :

  1. Heat oil in a wok over high heat. Add garlic and ginger, and stir-fry for 1 minute or until garlic is light golden. Add eschalots, spring onions and beef, and stir-fry for 2 minutes or until eschalots have softened. Add snow peas, bell peppers  and black bean sauce, then stir-fry for a further 3 minutes or until sauce is heated through and vegetables are tender but still crisp. Season with salt and pepper.
  2. Divide among bowls. Scatter with cashews and serve with rice (optional)

We’re not sure about you but our social calendar for May is full of functions, events and gatherings. Second to finding the perfect frock is finding the perfect thing to take along! This bite size recipe is easy, time efficient AND plus . . . who can resist strawberries 😉

PREP : 20 minutes

MAKES : 36

INGREDIENTS :

  • 3 dozens fresh Strawberries
  • 300g Philadelphia Cream Cheese, softened
  • 1/2 cup Icing Sugar
  • 1/4 tsp Almond extract

METHOD :

  1. Remove stems from strawberries; cut a deep “X” in the tip of each berry. Gently spread berries open.
  2. In a small bowl, beat the cream cheese, icing sugar and extract until light and fluffy. Pipe or spoon about 2 teaspoons into each strawberryberry; sprinkle with chocolate. Chill until serving.

With Autumn getting into full swing, so are our cravings for comfort food (quietly we hope that we are NOT the only ones who feel this way). For all the “snackers” out there, we’ve come across an easy peasy autumn snack that is sure to satisfy your taste buds! The plus side of it – you will not have to take up extra boot camp classes to burn it off!

Apple & Blue Brie Cheese Stacks

PREP : 10 minutes

MAKES : 16

INGREDIENTS :

  • 2 Pink Lady apples
  • 1 x 200g packet of Blue Brie cheese, chilled & thinly sliced
  • 300g of Walnuts, finely chopped

METHOD :

  1. Use an apple corer to remove the cores from the apples. Cut each apple crossways into 5mm-thick slices.
  2. Arrange the apple slices on a serving platter. Top with a slice of blue cheese and sprinkle with the walnut.

NOTE :

  • Make this recipe up to 15 minutes before serving. Cover with plastic wrap and store at room temperature.

A little cheeky treat to enjoy on this Sunday afternoon. This one is strictly for the grown ups 😉

Watermelon Double Punch

Ingredients
Serves: 20
  • Half a big watermelon cut into pieces
  • 1/2 bottle vodka (or to your preference)
  • 1 bottle champagne
  • 1 bottle ginger ale
  • 1 bottle orange juice
  • ice
Preparation method
1. Soak the watermelon in the vodka for a couple of hours.
2. Add the watermelon and all the other ingredients into a punch bowl.
3. Mix and serve. Top up when required with equal proportions of each ingredient.
TIP – you can add slices of orange for extra flavour.

Taking The Night Off

Sometimes we just need a night off!

Forget catering to guests,

and there’s no hope of getting off the couch tonight.

Tonight is a night for a good movie in the p.j’s!

But what do you conjure up for dinner when you’re feeling this way?

Something easy-peazy. . . .

Nachos

Ingredients

  • 1 tablespoon oil
  • 1 large brown onion, finely chopped
  • 1 small red capsicum, diced
  • 1 small green capsicum, diced
  • 2 cobs of corn, kernels removed
  • 400g can diced tomatoes in juice
  • 420g can four-bean mix, rinsed and drained
  • 1/2 teaspoon Tabasco sauce
  • 1 x 220g packet light corn chips
  • 1 cup reduced-fat grated tasty cheese
  • 1/2 avocado, peeled, cored
  • 2 tablespoons lemon juice
  1. Heat oil in a large heavy-based frying pan over medium-high heat. Then set the oven to preheat at 200°C. Add onion to the pan and cook, stirring, for 2 to 3 minutes or until onion is tender.
  2. Add red and green capsicum, corn kernels, tomatoes, beans and Tabasco. Season with salt and pepper. Bring to the boil. Reduce heat to medium and simmer for 20 to 25 minutes, or until vegetables are tender and beans are heated through.
  3. Arrange corn chips on heatproof serving plates. Sprinkle with half of the cheese. Spoon over bean mixture. Sprinkle with remaining cheese. Bake for 10 minutes or until corn chips are crisp and cheese is melted.
  4. Place avocado into a bowl. Add lemon juice and mash. Dollop over dish and serve.
